Spinach Green Onion Frittata

Ingredients[edit]

  • 1 cup of chopped spinach
  • 2 tablespoons of green onion
  • Salt (to taste)
  • Pepper (to taste)
  • 2 sprays of cooking spray
  • Shredded cheddar cheese (for the top of the frittata)

Directions[edit]

  1. Chop the spinach with a pizza cutter, and add to bowl. Do the same with the green onion. Add the salt and pepper.
  2. Add six eggs and stir. Spray the pan and cook the mixture for about 6 minutes. Add the cheddar cheese to the top as desired.
  3. Cover the handle of the pan with aluminum foil as needed. Put in a 400 degree oven for 6 minutes.
  4. Slide the frittata out of the pan onto a plate and cut into 8 pieces.
